My first attempt at Carbonara

Ive watched it get made 1000 times, ive never even ate it before.

I used applewood thick cut bacon, ( I bought pancetta, but ended up going on a 2 week hunting vacation and the wife used it 😂)

I cut out most of the bacon fat, and ended up adding some extra virgin olive oil at the end (probably sacrilegious lmao)

subbed chicken eggs for quail eggs

I think I did pretty good
