Making Smoked French Dip Sammies for Dinner

Anyone ever done this before?

I wanted to do something totally different and with a nice temp outside and sunny day I thought it was time to hit the smoker up.

I have started with a 3.5lbs bottom roast. Covered it in olive oil and a blend of salt, pepper and garlic. I just put it on the smoker for its first part of the journey to smoke at 225 until it hits 165. At 165 I pull it off and put it in a pan with the sauce, cover and let it cook until it hits 205.

Again I have never done this before but the recipes online looked good so I am giving it a try.
