Have you ever done hot and fast pork butts? I’m about to throw two 10 pounders on the smoker at midnight. Usually put it on 200 overnight and check it about 7 when I might bump it up. Read on some forums about doing them in half the time at 275 to 300.
Easier and quicker but wouldn’t be as smokey. Thoughts?
