Picked up one of these a few weeks ago. Not the little tenderloin, the massive 10-12 pound whole loin. I had no idea what I was going to do with all of this pork, or if it would be any good, but at about $25 bucks for the whole loin I figured I could feed it to the dog if it was bad. Found this video by Babish and did exactly what he did. Cooked the rolled loin roast fresh after trimming and cutting out the chops. Vacuum sealed all the chops and put them in the freezer. The roast was outstanding and we had a few grilled chops from the freezer this weekend and they were very flavorful and tender. We've yet to Sous Vide and sear any of the leaner sirloin chops.

If you're looking for a bargain with rising grocery prices or just want to try something different and pack the freezer for some easy meals in the future, give it a shot. I was really surprised at how good everything turned out.
